Cornmeal Stuffins with Honey Sage Butter

Q: Ok, Jillian. What is a stuffin?!
A: It’s like a muffin.
Q: And the ‘stuff’ part?
A: Stuffing.
Q: So…muffin and stuffing? As in, turkey stuffing?
A: Right, like all the flavours of stuffing; sage, thyme, carrot, onion….but in muffin form.
Q: That’s amazing.
A: That’s not a question.
Cronut, watch out. There’s a new hybrid baked good in town, and it’s vying for supremacy.
Stuffing is, in my opinion, the pinnacle of the holiday table. Turkey, eh. Mashed potatoes, eh. Stuffing?
MOAR STUFFING.
So it seemed only natural, on this unseasonably cool evening, to take the humble stuffing to new and uncharted territory. Where it’s socially acceptable to not use a fork.
Thus the stuffin was born, and it is glorious. Cornmeal and millet flour impart a deliciously moist, golden crumb. Fresh sage and thyme bring you forward (or back) to a holiday spent around the table with family. Let’s celebrate Thanksgiving in July!
- 1 cup milk
- 1 Tbsp apple cider vinegar or lemon juice
- 3 Tbsp butter, melted
- ½ cup cornmeal
- ½ cup millet flour
- ½ cup spelt or whole wheat flour
- ½ tsp baking soda
- 1 tsp salt
- ¼ cup finely chopped yellow onion
- ¼ cup finely chopped carrot
- 2 Tbsp finely chopped celery
- 1 Tbsp minced fresh sage
- 1 tsp minced fresh thyme
- 2½ Tbsp butter
- 1 tsp minced fresh sage
- ½ tsp honey
- Preheat oven to 350 degrees and grease 6 muffin tins.
- In a large bowl, combine milk and apple cider vinegar and let sit for 5 minutes. Stir in melted butter.
- Mix all dry ingredients and add to wet. Stir well, then add mixins.
- Divide batter evenly among 6 muffin tins. Bake for 20-25 minutes, until a toothpick inserted in the centre comes out clean. Let sit for 10 minutes before transferring to cooling rack.
- Make the butter: In a food processor (or a small bowl, using some elbow grease), add butter, minced sage, and honey, and pulse until butter is light and fluffy, scraping down the sides as needed.
- Enjoy warm stuffins with a generous smear of honey sage butter.
