Grilled Halloumi Kale Salad with Apple & Sweetcorn

Aaand we’re back! After a little jaunt around a couple countries and a renewing yoga retreat, I’m back to Real Life, and bringing a new recipe with me. I actually made this *before* I left, but then packing procrastination happened and I ran out of time to post.

Grilled Halloumi Kale Salad with Apple & Sweetcorn

Ingredients
- 100g halloumi (Greek cheese), sliced ½ inch thick
- high heat oil, to brush
- 1 bunch lacinato (dinosaur) kale
- ½ large Fuji apple, diced
- 2 cobs corn
dressing
- 1 Tbsp olive oil
- 2 Tbsp lemon juice
- 1½ Tbsp tahini
- ⅛ tsp salt
- pepper, to taste
Instructions
- Wash and de-stem the kale and slice into thin strips, about ½ inch wide.
- In a small jar, combine all dressing ingredients and shake vigorously until it emulsifies. Pour dressing over kale and massage for 1 minute. Let sit.
- Heat a small frying pan over medium-high heat. Lightly oil the halloumi and fry for a few minutes on each side, until golden.
- Place the husked corn in a large bowl and using a knife, slice off the kernels.
- Divide kale into two bowls and top with apple, corn, and halloumi.
