PB Chocolate Mousse
Hey, look–it’s a dessert that doesn’t involve oats! (cheering)
I should admit, though, that this wasn’t exactly consumed as dessert…or, rather, it was a dessert thoroughly enjoyed at 7am. (shuffles feet)
Presenting: amazingly creamy, light mousse, made in just 5 minutes in a blender! No whisking required. It features one of my favourite products, PB2, (peanut flour), which adds an intense peanut flavour to baked goods, oatmeal, and this mousse! Raw cashews add richness and cacao powder bring the chocolate. Um, yum?!!
After bingeing the awesome Stranger Things on Netflix a couple weeks ago, I’ve been listening to the newly-release soundtrack. The title track still sends shivers down my spine! So good!
Enjoy this mousse as dessert any time of day…
- 1½ Tbsp chia seeds
- ½ cup almond milk
- 2 Tbsp (heaped) raw cashew pieces
- 3 Tbsp PB2 (peanut butter powder)
- ½ Tbsp + 1 tsp cacao powder
- ½ - 1 Tbsp sugar
- good pinch sea salt
- Add all ingredients to blender and blend on high until smooth. Chill for at least 4 hours before serving.
