Smashed Potatoes with Salt & Vinegar Aioli

If you like salt & vinegar, you’ll go crazy over these potatoes! They’re a riff on this recipe from Oh She Glows, and I can’t believe I didn’t try this potato technique sooner! Stay home, stay safe, and make these tonight!
Smashed Potatoes with Salt & Vinegar Aioli

Ingredients
Potatoes
- 1 kg smallish red potatoes
- olive oil, for greasing & brushing
- pepper
- flakey sea salt
- chives, to garnish (optional)
Aioli
- ¼ cup vegan mayo (I like vegenaise)
- 1½ tbsp distilled white vinegar
- 1 large clove garlic, pressed or finely minced
Instructions
For the potatoes
- Heat oven to 450F.
- In a large saucepan, cover potatoes with cold water and bring to a boil. Reduce heat and simmer for 20-25 minutes until tender. Drain and let cool for a couple minutes.
- Lightly oil a large baking sheet. Using the bottom of a large glass or jar, smash each potato down on the baking sheet, until about 1cm thick. Brush with olive oil, and sprinkle with salt and pepper. Bake for 25 minutes, until crispy. Serve with aioli and sprinkle with chives.
For the Aioli
- Gently stir all ingredients together in medium bowl.
