Starry Night Baked Doughnuts

Although it might *finally* be warming up here in San Francisco, this past weekend was unusually chilly. Sunday morning I woke up to iron skies and a creeping bookishness, so the day was spent curled up on my couch finishing The Golem and the Jinni. It’s a remarkable melange of fantasy and historical fiction, set in early 20th century New York. An incredibly well-paced and captivating read; highly recommended.
And, what better accompaniment to a good book than a good doughnut?
Starry Night Baked Doughnuts

Serves: makes 6 doughnuts
Ingredients
- 2 Tbsp flax meal
- ¼ cup warm water
dry
- ½ cup oat flour
- ½ cup spelt flour
- ¼ cup shredded coconut
- 3 Tbsp sugar
- 1 tbsp cornstarch
- ¾ tsp ground star anise
- 1 tsp baking powder
- ½ tsp salt
wet
- 2½ Tbsp melted coconut oil
- ½ cup + 2 tbsp milk
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350 degrees.
- In a medium bowl, add flax meal and warm water. Let sit.
- In a large bowl, mix all dry ingredients.
- Add wet ingredients to flax mixture, mix well, and add dry ingredients. Stir to combine.
- Oil a 6-doughnut pan and fill with batter.
- Bake for 20-25 minutes, until an inserted toothpick comes out clean.
