Summertime Apple Crumble

I woke up this morning to the sound of birds chirping…it’s really starting to feel like summer here in San Francisco. We’ve had so much rain this spring! I’m ready for blue skies and warmer days for sure.
I picked up a bag of Fuji apples at the farmer’s market this weekend, and they were so crisp and sweet and juicy; the perfect base for this light and delicious apple crumble. Five minutes, no oven required! I hope you can enjoy this recipe where there’s lots of sunshine.
Summertime Apple Crumble

Ingredients
- 1 medium Fuji apple, cored and sliced or diced
- ¼ cup rolled oats
- 2 tbsp almond meal
- 1 tsp coconut sugar
- ¼ tsp cinnamon, plus more to top
- 1/16 tsp ground ginger
- pinch ground mace or nutmeg
- pinch sea salt
- dash of allspice
- dash of cloves
- 2 tsp melted coconut oil
Instructions
- Mix oats, almond meal, sugar and spices in a medium bowl. Pour in coconut oil and mix again until almond meal is crumbly.
- Arrange apple slices on a plate or in a bowl. Sprinkle generously with cinnamon. Distribute crumble mixture on top and enjoy!
