Supergreen Avocado Chickpea Pancake

I love chickpea flour! You can make frittatas, pakoras, fries… and today I’m bringing you a giant pancake! With vitamin-packed spinach and avocado, it will keep you going all day. Top as you fancy; here I went with some nutritional yeast, sesame seeds, and chili oil. You can’t go wrong!

Ingredients
- 25g fresh spinach (one large handful)
- ⅓ chickpea flour
- 2 tsp zaatar
- ⅛ tsp salt
- ½ cup water
To top
- Avocado
- chili oil (optional)
- walnuts (optional)
Instructions
- Roughly tear or chop the spinach, place into a medium microwave-save bowl, and microwave for 30 seconds.
- Add chickpea flour, zaatar, and salt. Slowly incorporate water and mix until no lumps remain.
- Heat a large non-stick skillet over medium heat. When hot, add a drizzle of oil and swirl it around until the pan is well-coated (you can also use a paper towel or silicon brush for this).
- Pour batter into pan and use the back of a spoon to spread it. Cook for 3-5 minutes until golden on the bottom, flip, and cook for an additional 3 minutes.
- Top with avocado, chili oil, walnuts...and enjoy!
