Sweet Potato Pie Chia Pudding

It’s basically dessert for breakfast. But, healthy dessert! If you’ve never had sweet potato pie, it’s like everything pumpkin pie should be. Spend a few minutes tonight boiling the sweet potato and soaking the chia seeds, and you’ll have a bowl of spiced deliciousness tomorrow.
Pureeing the chia seeds is a great way to turn weird jello into smooth, creamy pudding. If you’ve been put off by the texture before, try out this recipe. It will make your morning.

Sweet Potato Pie Chia Pudding
Serves: 1 generous bowl
Ingredients
- 1½ tbsp chia seeds
- ½ water
- 100g sweet potato (about ½ small sweet potato)
- ⅛ cup raw cashew pieces
- ⅛ cup raw broken walnuts
- 1 medjool date, pitted
- 1 tsp pumpkin pie spice
- pinch of salt
Instructions
- Add chia seeds to bowl and pour over water. Cover and for at least 30 minutes, or overnight.
- Peel and cube sweet potato. Boil until soft and rinse under cold water.
- Add gelled chia liquid, sweet potato, nuts, date, spice, and salt to blender and blend until smooth. Top as you fancy and enjoy!
