Yes, I know “Vegan Parmesan” recipes are a dime a dozen– but! This version contains a secret ingredient that elevates it above the rest.
Drumroll please….
…Oats! Yep, believe it or not, oats really helps to mimic that “cheesy” flavour. We also add nutritional yeast, almond meal for richness, and a small clove of raw garlic.

Ingredients
- ½ cup oats (instant or rolled are both fine!)
- 1 cup almond meal
- 1 cup nutritional yeast
- ¾ tsp fine sea salt
- 1 small close garlic
Instructions
- Add oats to a high-speed blender and blend until powdery. Add the remaining ingredients and blend until uniformly textured. Store in the fridge up to a few weeks. Use on top of pasta, salads...or just about anything!
